- About us
A story like no other
Our story began with a dream in 1946, when Sebastiano and Francesco Capurso set out on their bicycles to collect milk from local farms across Puglia. Since then, we have grown into a solid and established dairy company, with two production facilities and the capacity to process 400 tonnes of milk every day. Through our work, we bring the authentic flavours of our land to tables around the world.

Our commitmentto certified quality
Achieving PDO certification for Mozzarella di Gioia del Colle was a milestone that reflects our story and our deep bond with Puglia. We know that this recognition is a great responsibility: turning the best milk into a product of excellence every day, while meeting strict quality standards. Being PDO certified is not just a symbol of guarantee, but a commitment we renew in every dairy product we make. Each of our PDO mozzarellas is produced in accordance with the standards set out in the official document, the Mozzarella di Gioia del Colle PDO Product Specification.

We are proud custodians and guardians of this heritage, knowing that this uniqueness is reflected in every dairy product we make.

The Mozzarella di Gioia del Colle PDO supply chain
A mark of guaranteed quality: every production stage follows strict Production Specifications, safeguarding its authenticity and ensuring excellence.

Controlled Origin
The milk comes exclusively from farms located in the hinterland of Bari and Taranto and in a small area of the province of Matera. This connection with the land gives our products their unique character.

Animal Welfare
The animals are raised according to traditional methods and are free to graze for at least 150 days a year, ensuring milk rich in organoleptic qualities.

Rapid Processing
The milk is processed within 48 hours of milking to preserve its freshness and quality. Every batch is carefully checked in accordance with strict hygiene and quality standards.

Traditional Cheesemaking
The curd is acidified using a native whey starter, obtained by developing the milk’s natural microflora. This process gives the mozzarella its distinctive flavour.
